As promised I am going to post some super simple baby food recipes. Today's recipe is Sweet Potato Puree. This was the first food I introduced to my son and he loved it! Before you start make sure you have everything you need at hand:
- 2 large sweet potatoes
- Peeler
- Knife
- Cutting board
- Large pot
- Food processor or blender
- Ice cube trays/Baby Cubes (for freezer storage)
- Wash then peel sweet potatoes
- Cut into cubes (try to make them all the same size so they will cook at the same speed)
- Place cubes into pot with water, boil for 20 minutes or until tender.
- Drain, reserving some of the cooking liquid. This will be used in the puree as our liquid, it holds some of the nutrients that were lost during the cooking process.
- Transfer puree to food processor and blend until you reach your desired consistency, adding reserved liquid as needed.
- Serve immediately or freeze for later use. Don't forget to mark the date made.
